W.A. CLEARY PRODUCTS is a subsidiary of
W.A. CLEARY CORPORATION which was founded
in 1937 by William Aloysius Cleary.
Bill Cleary was a pioneer in the use of Soy Lecithin in the
confectionery and baking industries; lecithin is a by-product of the
soy bean and obtained during the process of refining
salad oil from crude soy oil.
During the late 30's and early 40's lecithin became
an important ingredient as a viscosity reducer in the
manufacture of chocolate, a fraction of a percent of
lecithin replaces a significant amount of cocoa butter,
which is very expensive. Today lecithin has many uses -
in the bakery industry it is widely used in food mixes from
cakes to waffles to donuts; in industry it is used in
adhesives, tapes, and paints.
